Ancestry (no point in linking, it's totally paywalled) tells me that the surname Economy is an "Americanized form of Greek Economos 'steward', or of the patronymic form Economou." I have no idea of how to asseess this claim, since it's all Greek to me when it comes to Greek surnames.
