Jamie Oliver, believe it or not, has a killer roasted garlic risotto recipe that I've made many times (link)

It's even better in the printed book version -- add a dollop of mascarpone to each serving before sprinkling the crunchy parts on. And the celery is less weird than you might think.

Dammit, now I'm hungry.

Thanks! That does look good (and I like Jamie Oliver). I imagine the celery is to brighten the garlic/almond combination, which would be pretty dour otherwise. You could probably substitute red bell pepper and get the same effect, without the celery taste, which some people really object to.

But wait, does this recipe call for any ice-cube sucking?

I like to leave the ice-cube sucking to the republicans. Bush takes his with lemon -- helps him keep that Church-lady pursed lips look on 24/7 without spraining his face.

Anyway, green apple makes another excellent celery substitute, though I've never tried it in combination with the garlic. Peel and cut very, very thin slices, add with the rice, and stir gently...

Quinoa with walnuts and basil isn't bad. But it took quite a bit of tamari to give it some flavor. If anyone knows a way to make quinoa delicious, I'd love to hear it.
